The Jade Range of Belle Epoque Absinthes
Produced at the historic Combier distillery in century-old alambics originally built for Pernod Fils,
the Jade range of Belle Epoque absinthes offers some of the closest commercially available
approximations of the fabled absinthes of the pre-ban era.

Crafted by New Orleans native Ted Breaux using wherever possible the original equipment and
methods employed by the artisans of the past, these absinthes are based on careful selection of  
only the most fragrant herbs, the finest grape-based alcohols and scrupulous attention to the
original 19th century production protocols.

But the Jade absinthes offer more than historical verisimilitude - they offer the discerning
modern-day absintheur an extraordinary range of taste experiences, from the remarkable new PF
1901, a clone of pre-ban Pernod Fils, to the aromatic Edouard, to the full bodied and powerful Verte
Suisse, the delicately  floral Nouvelle Orleans and the crystal-clear Blanchette with its scent of
alpine herbs.

In the late 19 century, the house of Edouard Pernod boasted a reputation for crafting some of the best absinthe
the world has ever known. First established at Couvet, Switzerland, then later Pontarlier, France, the Edouard  
Pernod distillery boasted eight alambics and produced almost 300,000 liters of absinthe annually. At the time of
the ban, Edouard Pernod had become the 3rd largest absinthe distiller in France and was considered one of the
very finest marques. Based on careful analysis of samples drawn from one of the very few survivng pre-ban
bottles, Jade Edouard seeks to duplicate all aspects of the original, from its delicate green colour to its refined
texture and delightfully aromatic finish.

Jade VS 1898 65% (formally called "Verte Suisse")

The distillery of C. F. Berger was founded in Couvet, in the canton of Neufchâtel, Switzerland in 1823. The Berger
distillery produced several Swiss style absinthes, the most famous of these being the C. F. Berger 65%
absinthe verte, which earned its status as one of the premier absinthes of the 19th century. Through careful
analysis of a rare surviving 19th century bottle, Jade Liqueurs has painstakingly resurrected the heritage of this
fine absinthe from extinction. The most full bodied of the Jades, the Verte Suisse has a powerful herbal scent, a
rich and creamy mouth-feel, and a long, lingering aftertaste.

As the popularity of absinthe swept through France during the mid 19th century, the "Green Fairy" began making
her way over to the "Paris" of the New World, Nouvelle-Orléans (New Orleans). French-speaking travelers and
immigrants alike carried their passion for absinthe with them to this vibrant port city, and by the advent of the 20th
century, cafés like the famous Old Absinthe House were making a name for themselves by cooling the humid
summers with absinthe frappes and the famous absinthe-based Sazerac cocktail. Jade Nouvelle-Orléans - with
its unique perfume, light, refreshing mouth-feel and delectable floral finish - pays tribute to the now long-forgotten
New Orleans absinthes of this era.

Combier Blanchette 60%

"Blanchette", the original absinthe produced by Distillerie Combier (Saumur, France) circa 1900. Blanchette is a
Swiss-style, clear absinthe that yields a distinct aroma and flavor of anise and grande wormwood, with a
background of alpine herbs. Like our other Jade absinthes, Blanchette is crafted entirely by hand in the antique
copper absinthe stills in the Combier distillery.

Christened Jade Absinthe ‘PF 1901’ its unusual name is in recognition of the anniversary of
the year that gave the old Pernod alambics a new life.  A huge amount of work and original
research has gone into the creation of this product. Since the beginning of the Jade project,
techniques have been improved upon as Breaux has become more familiar with the
intricacies of the old 19th century alambics, and plants sources have been upgraded where
ever possible.  All the wormwood used in the PF 1901comes from new plantings in Pontarlier,
regarded as the source of the finest wormwood, and of course the origin for the wormwood
that went into all the great classic absinthes of the 19th century.   Breaux’s Jade absinthes are
the first modern absinthes made outside of Pontarlier to use its wormwood, and its highly
aromatic qualities are immediately apparent.

PF 1901 is a classic ‘old-school’ absinthe, balanced and crisp, with an appetizing
herbal aroma and a smooth, lingering aftertaste.

In 1901 a devastating fire swept through the famous Pernod Fils distillery in Pontarlier. If it had
not been for the quick thinking of two workers who opened the spigots on the giant barrels of
absinthe, allowing them to drain into the Doubs River, the destruction could have been much
more severe. When the distillery was rebuilt and repaired, the original alambics were replaced by
the most modern equipment of the time.
The old alambics were either destroyed by the fire and sold for scrap or sold off to smaller
distilleries. The Combier Distillery purchased two of these 1100 liter stills andinstalled them
along with the 8 smaller stills which had been a part of the distillery since 1894.  The
importance of this history and especially the authenticity of these two circa 1870’s alambics
were not overlooked when Ted Breaux chose the Combier Distillery in which to make Jade
vintage absinthes clones.
